Blue Oyster Mushroom
Scientific Name: Pleurotus ostreatus var. columbinus
Blue Oyster mushrooms feature a striking steel-blue hue when young, turning gray as they mature. Popular in gourmet cuisine, they have a mild, anise-like flavor and velvety texture that becomes pleasantly chewy when cooked. They are rich in antioxidants and often used in stir-fries, soups, or roasted. Blue Oysters are also studied for their potential cholesterol-lowering effects and immune system support.
