Golden Oyster Mushroom
Scientific Name: Pleurotus citrinopileatus
Golden Oyster mushrooms are among the most visually striking, with bright lemon-yellow caps that grow in elegant, fluted clusters. They have a fruity, floral aroma and a mild, peppery flavor when raw that mellows into nuttiness when cooked. The texture is delicate, with thin flesh and caps that crisp nicely when sautéed or roasted. They are rich in protein and antioxidants but have a short shelf life, making them best enjoyed fresh.
Substrate: Pasteurized straw, hardwood sawdust, or Master's Mix
Colonization Temp: 75–80°F
Fruiting Temp: 70–85°F
Fruiting Humidity: 90–95%
Light: Moderate to bright indirect light (enhances pigmentation)
FAE: High (very sensitive to CO₂ buildup—elongation and deformed caps occur easily)
Notes: Extremely fast to pin and fruit; sensitive to handling and short post-harvest viability.
Cultivation Difficulty: Beginner
